30 ml 2 tbsp butter
30 ml 2 tbsp flour
250 ml 1 cup whole milk, heated
375 ml 1 1/2 cups diced, cooked ham
4 green onions, green part only, sliced thinly
60 ml 4 tbsp currants
1 ml 1/4 tsp clove powder
To taste salt and freshly ground pepper
45 ml 3 tbsp granulated maple sugar
45 ml 3 tbsp tomato ketchup
As required orange juice
Preheat oven to 180°C / 350°F. Generously butter four 125-ml / 1/2-cup ramequins and line the bottoms with a circle of parchment.
In a skillet, melt the butter over medium heat. Sprinkle with flour and cook, stirring, over low heat for 2 minutes. While stirring, add the hot milk, bring to a boil and remove from heat.
Stir in the ham, green onions, currants, clove powder, salt and pepper.
Divide the mixture among the ramequins and bake in a bain-marie for about 45 minutes or until the tip of a knife inserted in the middle comes out clean. Remove from oven, cover and let sit in the bain-marie for 10 minutes.
In a small saucepan, combine the maple sugar and ketchup, thinning with a little orange juice. Bring to a boil and remove from heat.
Unmould the pâtés onto four plates and garnish with a little sauce. Serve with cooked julienned carrots.
