Bay Leaf and Fennel Oil

1/2 lemon zest
1 litre (4 cups) extra-virgin olive oil
12 bay leaves
75 ml (1/3 cup) fennel seeds
- Wash lemon in warm water and cut strips of zest with a paring knife from half of the lemon.
- Combine all ingredients, pour into sterilized jars and seal.
- Store in refrigerator for up to two months.
Tip: This oil is delicious with fish. It also adds excellent flavour to rice or other grain-based stuffings for vegetables.
